Production Brewer - Quality Specialist

Sixpoint is a Brooklyn, NY-based craft brewery, born out of an 800-square foot garage in Red Hook in 2004 by homebrewer Shane Welch.

 

About the Opportunity:

The Production Brewer- Quality Specialist will report to and assist the Sixpoint VP-Brewing and Quality with quality control, production processes, and administrative duties at the Memphis based facility.

  • Bachelor’s degree required
  • A love for the laboratory – constant testing and analysis of beer quality
  • Beer flavor certification and other beer / brewing related courses highly desired
  • Recognized Brewing Education certification preferred
  • Minimum of 2 Years Brewing Experience

 

Fermented with:

  • Overseeing and actively participating in all production brewery operations
    • Review all brew records and ensure BOM (Bill of Materials) and SOP (Standard Operation Procedure) compliance
    • Assist in identification of anomalies and brainstorm cause and effect projections to correct anomalies
    • Work directly and have active dialog with AP brewing supervisors and brewers
    • Partner with the VP – Brewing and Quality to drive continuous product improvement at all stages of the brewing process
    • Work directly with the VP-Brewing and Quality to develop pathways to increase yield while maintaining or improving quality and decreasing production time
    • Monitor shift to shift consistencies and identify shift specific variances
    • Conduct tastings of all brews throughout the process to ensure brand specific flavor profile consistency
  • Assisting with record keeping and data filing
    • Keep electronic weekly schedule and brew projection templates up to date
    • Download key parameter data from hard-copy records to hard drive file folders
    • Calculate raw material brewhouse yields
    • Keep and analyze product loss data
    • Retain records for all raw material analyses including malt, adjuncts, hops and other brew materials
    • Manage retained beer library
    • Retain hard copies of brew records and other paper work provided by our AP in secure files to support federal, excise and FDA conformance
  • Performing audits in maintaining a clean, neat and safe facility
  • Collaborating with VP-Brewing and Quality on new beer innovation
  • Assisting VP-Brewing and Quality with formulation adjustments  
  • Working directly with the lab to ensure reports are timely and analyzing lab reports
    • Sample and approve beers for packaging release alongside Sixpoint personnel, AP lab and production brewing staff
    • Sample and send beer to independent laboratory to ensure AP lab variances are acceptable at least once every 6 months
    • Draw sterile samples of beers for full microbiological analyses at least once every 3 months
    • Collect sterile yeast samples for submission to external laboratory for PCR analysis every 4 months 
  • Spearheading current and future development projects:
    • Work alongside VP- Brewing and Quality and tasters to explore use of new technologies in brewing
    • Develop methodology for shelf-life determination and conduct individual brand shelf-life testing for both physical and flavor parameters
    • Develop centrifuge performance optimization parameters for each brew formulation to maximize filtration performance
    • Broaden involvement with public tastings and represent the brewery at festivals and events
