The Executive Chef of the Dankness Dojo reports to the General Manager of this property and is responsible for overseeing the training and development of all kitchen staff, overseeing the full vegan menu creation, and maintaining the highest levels of sanitation and cleanliness in all areas of the kitchen.  This individual will craft breakfast, lunch, dinner, and snack offerings offered seven days a week, while also taking advantage of unique opportunities in the LA market to host beer dinners and collaborative events. S/He will create a culinary program that can stand next to the award-winning offerings of Modern Times Beer and Coffee. Candidates must share Modern Times’ commitments to quality, safety, business ethics, and continuous innovation.


  • Responsible for all food production and vegan menu development
  • Responsible for food safety and food quality within the kitchen
  • Set and maintain standards of product presentation, timely service, and portion control
  • Continuous improvement of food quality and menu offerings
  • Ensure the controlling of food costs by limiting waste, smart design of our dishes, obtaining fresh inputs for maximum shelf life, and using appropriate storage techniques
  • Prepare reports regarding food and menu analysis
  • Oversee inventory management, requisitioning and purchasing
  • Supervise the daily cleaning of the pantry, cooking line, prep areas, scullery, and walk-in
  • Monitor and ensure staff adherence to health department regulations regarding food handling, storage, temperature, and sanitation
  • Coach, support, and maintain continuous communication with all kitchen staff
  • Responsible for hiring, scheduling, training, evaluating, and corrective actions for all kitchen personnel, in accordance with the organization's policies and applicable laws
  • Develop and implement policies, procedures and rules 
  • Create an environment that encourages ownership, accountability, and maintains the highest standards of food and service
  • Have clear knowledge of all food products offered by Modern Times
  • Work with the executive team and the local sales force to take advantage of opportunities to host and/or collaborate with accounts and partners in the LA area
  • Work with the property management team to brainstorm and execute on special events at this property
  • Become an expert in all things Modern Times Beer and Coffee, and develop menu items that complement these products
  • Be a team player and be able to interact with all levels within the organization
  • Adhere to and enforce all applicable local, state and federal laws, rules, and regulations
  • Other tasks as needed


  • Must be 21 years of age or older at the time of application
  • Able to pass a post-offer, pre-employment background check 
  • A degree in Culinary Arts
  • Serve Safe Certification is required
  • Minimum of 3 years experience as an Executive Chef
  • Minimum of 5 years people manager experiences in a hospitality environment
  • Able to use all tools associated with the position including but not limited to knives, slicers, and choppers
  • Able to review and comprehend recipes and other necessary documentation
  • Thorough knowledge of food products, standard recipes and proper food preparation techniques
  • Complete understanding of kitchen operations
  • Demonstrated organizational skills, attention to detail, budgeting experience and full understanding of financials
  • Demonstrated word processing and spreadsheet computer applications
  • Ability to positively observe, communicate with and direct the actions of subordinates
  • Able and willing to work evenings, holidays, and weekends
  • Prior experience in a vegan restaurant environment ideal but certainly not required
  • Strong interpersonal skills and a love for meeting and interacting with people
  • Thorough attention to detail and desire to take initiative
  • Must adhere to company’s policies and procedures
  • The desire to work in a fast-paced, growing company


  • Up to 20% travel time may be required


  • Able to stand, walk, and be on your feet for prolonged periods
  • Able to read and follow written English instructions
  • Able to regularly twist, turn, kneel, climb, stoop, bend, crawl, lift and carry supplies and equipment weighing up to 55 pounds using appropriate techniques and tools
  • Able to maneuver packages of any weight above 75 pounds with appropriate equipment and/or assistance
  • Able to work in a factory/production environment which may be loud, slick, humid, cold, and hot
  • Able to work in indoor and outdoor environments with moderate noise and occasionally slippery floors
  • Able to comply with and enforce all health, safety, and personal hygiene policies and standards

Modern Times is a 30bbl production brewery in the Point Loma neighborhood of San Diego. Modern Times is named after a beautifully crazy utopian community founded in 1850, and (almost) all of our beers are named after real utopian experiments or mythological utopias. Today, we're distributed throughout California, Nevada, Arizona, Maui, and select international markets. We operate a tasting room at the brewery, as well as in San Diego’s North Park community. We plan to open new locations in downtown LA & Anaheim in 2017, both featuring brewing facilities, restaurants, specialty coffee shops, and much more radness than we can possibly list here. We brewed our first batch on May 18th, 2013; our beer went on tap for the first time on June 24th 2013; we held the soft opening for the Lomaland Fermentorium tasting room on August 9th, 2013; and our Grand Opening was September 7th, 2013.
